GBBO Salted caramel pancakes
This week on Gorenje’s Big Bake Off it’s Batter Week! Why not brighten up your morning with a huge stack of pancakes, dripping in a homemade salted caramel sauce and topped with crunchy walnuts and sweet banana? In fact, who says pancakes are just for breakfast? Enjoy this sweet treat morning, noon and night!
The word ‘pancake’ appears in print from as far back as 1430, and it’s been noted that even the ancient Greeks used to enjoy the sweet indulgence drizzled with honey. Taking inspiration from the Grecian emperors, try your hand at this mouth-watering stack:
|For the pancakes
|60g plain flour
||200g granulated sugar
||1 sliced banana
|Pinch of salt
||90g salted butter
||Handful chopped walnuts
|1 medium egg
||120ml heavy cream
|Oil, for frying
For the pancakes
- Put the flour in a bowl and stir in the salt. In a separate bowl, beat together the eggs and milk until combined. Pour the liquid into the flour mixture, a little at a time, while whisking, until you are left with a smooth pancake batter.
- Heat a little of the oil in a frying pan. Pour a thin layer of batter into the pan and cook until the edges start to curl. Flip the pancake and cook briefly on the other side.
For the salted caramel
- Heat the sugar over a medium heat, stirring constantly with a wooden spoon. The sugar will form clumps and eventually melt into a bubbling, thick brown liquid. Take extra care not to burn it at this stage!
- Once the sugar is completely melted, immediately add the butter. The caramel will bubble ferociously when the butter is added – don’t be alarmed!
- Once the butter has melted, very slowly add the cream while stirring.
- Allow the mixture to boil for a minute.
- Remove from heat, stir in the salt and allow to cool before using.
The final step
- Stack the pancakes high and drizzle over the delicious salted caramel sauce. Throw on the chopped walnuts and sliced banana, and enjoy!
